The key of course is to use the extra information given to help you work out the values of the odd or even cells.
Generally any sudoku variant has an extra rule that restricts the possible values for given cells, and it is in using this information to your advantage that is the key to solving any sudoku variant.
So with odd/even sudoku, as soon as you know whether the cells are odd or even then simply go through and knock out any impossible candidates: for instance if the cells must be even, then you can knock 1,3,5,7,9 out of all the shaded cells in a 9x9 puzzle.
